INGREDIENTS
5 oz Lean Ground Turkey
1/2 cup cooked Brown Rice
1 medium Bell Pepper
1/4 cup Tomato Sauce
1/2 small Red Onion
1 clove Garlic
1 tsp Olive Oil
1 oz Feta Cheese
Salt & Pepper to taste
1 tsp Dried Oregano
PREPARATION
Preheat your oven to 375°F.
Slice the top off the bell pepper and remove seeds and membranes. Set aside.
In a medium pan, heat olive oil over medium heat and sauté finely chopped red onion and garlic until translucent and fragrant.
Add the lean ground turkey to the pan, cooking until it is browned and no longer pink. Season with salt, pepper, and dried oregano.
Stir in the cooked brown rice and tomato sauce, allowing the mixture to warm through. Check seasoning and adjust salt and pepper as needed.
Spoon the turkey and rice mixture into the hollowed bell pepper, packing it in generously.
Place the stuffed bell pepper in a baking dish and cover loosely with foil. Bake for 25-30 minutes, or until the pepper is tender.
Remove the foil, sprinkle crumbled feta cheese on top, and return to the oven for an additional 5 minutes to slightly melt the cheese.
Remove from oven and let cool slightly before serving.
