INGREDIENTS
4 oz Lean Ground Beef
1 Whole Wheat Tortilla (approx. 60g)
1 oz Shredded Low-Fat Cheese
1/4 cup Diced Roma Tomato
1 tbsp Chopped Red Onion
1 Chopped Jalapeño
2 tbsp Chopped Cilantro
1 tsp Fresh Lime Juice
PREPARATION
Preheat your oven to 425°F.
In a non-stick skillet over medium heat, cook the lean ground beef until browned and crumbly, seasoning lightly with salt and pepper. Drain any excess fat.
In a small bowl, combine the diced Roma tomato, chopped red onion, jalapeño, cilantro, and lime juice to create a fresh salsa. Stir gently and set aside.
Lay the whole wheat tortilla on a baking sheet lined with parchment paper. Evenly spread the cooked ground beef over one half of the tortilla, then sprinkle the shredded low-fat cheese on top of the beef.
Fold the tortilla in half to encase the filling and press down gently.
Bake the quesadilla in the oven for 8-10 minutes or until the tortilla turns crispy and the cheese has fully melted.
Remove from the oven and let it cool for a minute before slicing into wedges. Serve warm with a side of the fresh salsa.
