INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 tsp Olive Oil
1 Garlic Clove
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin side down and sear for about 4-5 minutes until golden and crisp.
Carefully flip the salmon and cook for another 3-4 minutes, or until it has reached your desired doneness. Remove the salmon from the pan and set aside.
In the meantime, steam the green beans until they are tender-crisp, about 4 minutes.
Lightly sauté the minced garlic in a small pan with a tiny bit of olive oil until fragrant, then toss in the steamed green beans to combine and heat through.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes.
Drain the cauliflower and blend it with 2 teaspoons of olive oil, a pinch of salt and pepper until smooth and creamy. Adjust seasonings as needed.
Plate the dish by placing a serving of cauliflower mash alongside a portion of garlic green beans, and top with the perfectly seared salmon. Serve warm and enjoy.
