2 large Eggs
1 portion Red Bell Pepper (50g)

1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Peel (if desired) and cube the sweet potato into bite-sized pieces. Place the cubes on a baking tray, drizzle with half the olive oil, and season with salt and pepper. Roast in the preheated oven for about 20-25 minutes until crispy and tender.
While the sweet potato roasts, dice the red bell pepper and red onion.
Slice the turkey sausage into rounds. In a skillet over medium heat, add a small splash of olive oil and sauté the sausage slices until lightly browned. Add the diced red bell pepper and red onion to the skillet and cook for an additional 3-4 minutes until softened.
