Enjoy a vibrant plate featuring a perfectly seared salmon fillet partnered with garlicky green beans and a creamy side of mashed cauliflower. This dish is balanced and satisfying, showcasing tender, flavorful salmon rounded out by fresh, crisp vegetables and a low-carb, velvety mash.
INGREDIENTS
6 oz Salmon Fillet (skinless)
1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
1 Garlic Clove
Salt & Pepper (to taste)
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a nonstick skillet over medium-high heat and add half a teaspoon of olive oil.
Place the salmon fillet in the skillet, skin-side down if applicable, and sear for about 3-4 minutes until a golden crust forms. Flip and cook for another 3-4 minutes until just cooked through.
While the salmon is searing, steam the green beans until tender-crisp (about 4-5 minutes) and set aside.
Steam the cauliflower florets until very tender (about 8-10 minutes). Once soft, transfer to a bowl, add the remaining olive oil, minced garlic, a pinch of salt and pepper, and mash until smooth. Adjust seasoning as needed.
Toss the steamed green beans with a little extra garlic if desired, and season with salt and pepper.
Plate the seared salmon alongside the garlic green beans and a generous serving of mashed cauliflower. Serve immediately.
