INGREDIENTS
7 oz Salmon Filet (198g)
1 cup Asparagus (134g)
200g Yukon Gold Potatoes
1/4 cup Nonfat Greek Yogurt (60g)
1 tsp Olive Oil
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Preheat a nonstick skillet over medium-high heat and season the salmon filet with salt and pepper.
Add the salmon, skin-side down if applicable, and sear for about 4-5 minutes on each side until a golden crust forms and the fish is just cooked through.
While the salmon is cooking, peel and dice the potatoes. Boil them in salted water until tender, about 15-20 minutes.
During the last few minutes of the potato boiling, steam the asparagus in a steamer basket over simmering water until crisp-tender, about 4-5 minutes.
In a small saucepan, warm the olive oil and add the minced garlic. Allow the garlic to infuse the oil for about 1 minute without browning.
Drain the potatoes and mash them with the garlic-infused olive oil, nonfat Greek yogurt, and a pinch of salt and pepper until smooth and creamy.
Plate the seared salmon alongside a serving of steamed asparagus and a generous scoop of garlic mashed potatoes. Serve immediately.
