PREPARATION
Preheat your oven to 425°F (220°C) for roasting the potatoes and green beans.
Cut the red potato into small cubes and toss with 1 teaspoon of olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for 20-25 minutes until crispy and golden.
