Enjoy a vibrant medley of crispy tofu and fresh, colorful vegetables, all tossed in a light sesame-soy dressing. This stir-fry offers a satisfying crunch with every bite while delivering a balanced and clean meal perfect for any time of day.
INGREDIENTS
400g Firm Tofu
1 medium Red Bell Pepper (approx 120g)
1 cup Broccoli (approx 91g)
0.5 cup Snap Peas (approx 50g)
1 tbsp Sesame Oil
1 tbsp Low Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Seeds
PREPARATION
Press the tofu for 15 minutes using a tofu press or paper towels to remove excess moisture.
Cut the tofu into 1-inch cubes and toss gently with half of the sesame oil and a pinch of salt.
Heat a non-stick skillet or wok over medium-high heat and add the remaining sesame oil. Sauté the tofu until all sides are golden and crispy, about 6-8 minutes. Remove tofu from the pan and set aside.
In the same skillet, add chopped red bell pepper, broccoli florets, and snap peas. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
Return the crispy tofu to the skillet. Drizzle the soy sauce and rice vinegar over the mixture and toss everything gently to combine.
Finish by sprinkling sesame seeds over the stir-fry. Serve immediately and enjoy your nutrient-packed meal.
