Sweet Potato Gnocchi with Crispy Pan-Seared Chicken and Sautéed Greens
Enjoy a delightful combination of tender, crispy chicken breast paired with light, pillowy sweet potato gnocchi and vibrant sautéed greens. This dish brings together a medley of textures and flavors, balancing a savory sear with slightly sweet and earthy notes, making it both satisfying and nourishing.
INGREDIENTS
4 ounces Chicken Breast
1 cup Sweet Potato Gnocchi
1 cup Mixed Greens (Kale & Spinach)
1 teaspoon Olive Oil
1 clove Garlic
Salt & Pepper to taste
PREPARATION
Pat the chicken breast dry and season both sides with salt and pepper.
Heat a non-stick pan over medium-high heat. Once hot, place the chicken breast in the pan and sear for about 4-5 minutes per side until crispy and fully cooked through. Remove and let rest before slicing.
In the same pan, add the olive oil. Sauté minced garlic for about 30 seconds until fragrant.
Add the mixed greens to the pan and sauté for 2-3 minutes until just wilted. Season lightly with salt and pepper.
Meanwhile, warm the sweet potato gnocchi by either lightly sautéing in a separate pan with a tiny drizzle of olive oil for 2-3 minutes or briefly microwaving it until heated through.
Plate the gnocchi, top with sliced chicken breast, and add the sautéed greens on the side. Serve immediately.
