A delightful dinner featuring perfectly seared salmon paired with tender steamed asparagus and a creamy cauliflower mash enriched with a touch of nonfat Greek yogurt. The dish balances the rich flavors of the sea with a silky, velvety mash, creating a wholesome and satisfying meal.
INGREDIENTS
5.5 oz Salmon Fillet
6 Asparagus Spears
1 cup Cauliflower Florets
1/4 cup Plain Nonfat Greek Yogurt
1 tsp Olive Oil
Salt and Pepper (to taste)
PREPARATION
Pat the salmon dry and season with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil.
Sear the salmon for about 3-4 minutes on each side until a golden crust forms and the fish is just cooked through.
While the salmon cooks, trim the asparagus and steam them for about 4-5 minutes until tender-crisp.
In a small pot, steam the cauliflower florets until very tender (about 8-10 minutes).
Transfer the steamed cauliflower to a blender and add the Greek yogurt, a pinch of salt and pepper, then blend until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a generous serving of the cauliflower mash. Serve immediately.
