Enjoy a vibrant and healthful dinner combining a perfectly seared salmon fillet with crisp garlic-infused green beans and a creamy cauliflower mash. This dish balances rich, savory flavors with a light, refreshing finish for a satisfying and nutrient-packed meal.
INGREDIENTS
7.5 oz Salmon Fillet (approx. 213g)
1 cup Green Beans (125g)
1 cup Cauliflower (107g)
2 cloves Garlic
2 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season both sides lightly with salt and pepper.
Heat a nonstick skillet over medium-high heat with 1 teaspoon of olive oil. Once hot, add the salmon fillet skin-side down and sear for about 4 minutes, then flip and sear for an additional 3 minutes or until cooked through.
Meanwhile, steam the green beans until they are tender-crisp, about 3-4 minutes.
In a small pan, heat the remaining olive oil over medium heat and sauté the minced garlic (from 2 cloves) for about 30 seconds, then toss it with the steamed green beans.
For the cauliflower mash, steam cauliflower florets until very soft. Transfer them to a bowl and mash lightly with a fork or potato masher, adding a pinch of salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
