INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
0.75 cup cooked Brown Rice
1 tsp Olive Oil
1 clove Garlic
1 tbsp Fresh Parsley
1 tsp Fresh Thyme
1 Lemon Wedge
Salt & Pepper to taste
PREPARATION
Pat the salmon dry with paper towels and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil.
Place the salmon skin-side down (if it has skin) and sear for about 3-4 minutes until golden. Flip and cook for an additional 3-4 minutes or until cooked to your liking.
In a separate pan, heat a small drizzle of olive oil over medium heat and add the minced garlic. Sauté for 30 seconds until fragrant.
Add the green beans to the garlic oil and cook for 4-5 minutes until they are tender but still crisp. Season with a pinch of salt and pepper.
For the herb rice, reheat the pre-cooked brown rice in a microwave or a pan. Stir in the fresh parsley and thyme. Adjust seasoning with salt and pepper if needed.
Plate the salmon alongside the garlic green beans and herb-infused rice. Squeeze a lemon wedge over the salmon for an extra burst of flavor before serving.
