Preheat your oven to 400°F. Scrub the sweet potato clean, then pierce it several times with a fork. Place it on a baking sheet and roast for about 25-30 minutes until tender.
While the sweet potato is roasting, trim the ends of the green beans and rinse them. Mince the garlic cloves.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Add the minced garlic and sauté briefly until fragrant, then add the green beans. Sauté for about 5-7 minutes until they are tender-crisp. Season with salt and pepper to taste.
