PREPARATION
Preheat a skillet over medium-high heat and add the olive oil.
Season the chicken thigh with salt and pepper on both sides.
Place the chicken thigh in the skillet, skin side down if applicable, and sear for about 5-6 minutes per side until golden and cooked through. Transfer to a plate and let rest.
