PREPARATION
Preheat your oven to 425°F.
Peel (if desired) and dice the sweet potato into small cubes, then slice the red bell pepper and red onion into thin strips.
In a mixing bowl, toss the sweet potato cubes with olive oil, salt, pepper, and a pinch of paprika.
