Seared Salmon with Steamed Asparagus and Cauliflower Mash
Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet with succulent, steamed asparagus and a creamy cauliflower mash enriched with non-fat Greek yogurt and garlic, creating a satisfying dish that's both flavorful and nutritious.
INGREDIENTS
5 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1/2 cup Non-Fat Greek Yogurt
1 tsp Olive Oil
1 clove Garlic
Salt and Pepper (to taste)
1 tbsp Fresh Parsley
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat. Once hot, add the salmon and sear for about 3-4 minutes per side, or until desired doneness is achieved.
While the salmon cooks, steam the asparagus in a steamer or covered pot of lightly boiling water for 4-5 minutes, until tender but still vibrant.
Break the cauliflower into florets and steam for around 8-10 minutes until very soft.
In a bowl, combine the steamed cauliflower, non-fat Greek yogurt, and garlic (minced). Blend or mash until smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Garnish with freshly chopped parsley and serve immediately.
