INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1/2 tbsp Olive Oil
2 cloves Garlic
1 medium Sweet Potato
1 Lemon wedge
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Preheat a skillet over medium-high heat with a drizzle of olive oil.
Sear the salmon fillet for about 4 minutes per side or until cooked through and a nice crust forms. Squeeze a lemon wedge over the top during the last minute of cooking.
While the salmon cooks, steam or boil the green beans until tender-crisp, about 4-5 minutes. In a separate small pan, lightly sauté minced garlic in a small amount of olive oil and toss with the cooked green beans.
Bake or microwave the sweet potato until soft. Once cooked, scoop out the flesh and mash lightly with a pinch of salt and a drizzle of olive oil if desired.
Plate the seared salmon alongside the garlic green beans and a serving of sweet potato mash. Serve immediately.
