A bold and vibrant dish featuring perfectly seared salmon glazed with sweet-spicy mango sauce, served over fluffy jasmine rice. Fresh cucumber, red bell peppers, and avocado add cooling contrast to the heat, while a scatter of black sesame seeds provides subtle crunch.
INGREDIENTS
4 oz salmon fillet
1/2 cup jasmine rice
1/2 cup fresh mango, diced
1/2 cup cucumber, sliced
1/2 cup red bell pepper, sliced
1/4 medium avocado, sliced
1 tsp sriracha sauce
1 tbsp low-sodium soy sauce
1 tsp black sesame seeds
1/2 lime

Heat a non-stick skillet over medium-high heat.
Place salmon skin-side up in the hot pan and cook for 4 minutes.
Flip salmon and brush with the mango glaze. Cook for another 3-4 minutes until done.
While salmon cooks, slice cucumber, red bell pepper, and avocado.
Assemble the bowl by placing rice as the base.
Add the sliced vegetables around the rice.
Place the glazed salmon in the center of the bowl.
Drizzle with remaining soy sauce and any leftover mango glaze.
Sprinkle with black sesame seeds and serve with lime wedges.
