Enjoy a vibrant dinner featuring a perfectly seared salmon fillet accompanied by tender steamed asparagus and a creamy garlic-infused cauliflower mash. This dish balances rich, savory flavors with fresh, light vegetable notes, creating a satisfying meal that's both nutritious and delicious.
INGREDIENTS
7 oz Salmon Fillet
1 cup Steamed Asparagus
1 cup Cauliflower (for mash)
1/4 cup Skim Milk
1 tsp Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat with 1 tsp of olive oil until shimmering.
Place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms. Flip and cook for another 3-4 minutes until the salmon is cooked through but still moist.
While the salmon is searing, trim the asparagus ends and steam them for about 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam or boil 1 cup of cauliflower florets along with 2 minced garlic cloves until soft, about 8-10 minutes.
Transfer the cooked cauliflower and garlic to a blender or use an immersion blender. Add 1/4 cup of skim milk and blend until smooth. Season with salt and pepper to taste.
Plate the seared salmon with a side of steamed asparagus and a generous dollop of garlic cauliflower mash. Serve immediately.
