INGREDIENTS
6 oz Salmon Fillet
1 cup Broccoli
1 cup Cauliflower
1 tsp Olive Oil
1/4 cup Unsweetened Almond Milk
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Once the oil is hot, sear the salmon fillet skin-side down (if applicable) for about 3-4 minutes, then flip and cook for another 3-4 minutes until the center is just opaque.
While the salmon is cooking, steam the broccoli in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
For the cauliflower mash, add cauliflower florets and one clove of garlic (peeled) to a pot of boiling water and cook until very tender, about 8-10 minutes.
Drain the cauliflower and garlic, then transfer to a bowl. Add the unsweetened almond milk and a pinch of salt, and mash until you reach a creamy consistency. Adjust seasoning as needed.
Plate the seared salmon alongside the steamed broccoli and a generous serving of garlic cauliflower mash. Serve immediately.
