Enjoy a vibrant bowl that marries the smoky flavor of grilled chicken with the aromatic warmth of curry, perfectly balanced with tender Thai noodles and crisp, steamed broccoli. This light yet satisfying meal is designed to fuel your day without compromising on flavor.
INGREDIENTS
3.5 oz Chicken Breast (100g)
1 oz dry Thai Rice Noodles (28g)
1 cup Broccoli (91g)
2 tbsp Light Coconut Curry Sauce (30g)
1 tbsp Fresh Lime Juice (15g)
1 tsp Curry Powder
PREPARATION
Preheat your grill or grill pan over medium-high heat.
Season the chicken breast lightly with a pinch of curry powder and a squeeze of fresh lime juice.
Grill the chicken for about 5-6 minutes per side or until the internal temperature reaches 165°F (74°C). Once cooked, let it rest for a few minutes before slicing.
Meanwhile, cook the Thai rice noodles according to the package instructions. Drain and set aside.
Steam the broccoli until tender-crisp, about 3-4 minutes.
In a large bowl, combine the cooked noodles and broccoli. Drizzle with the light coconut curry sauce, add an extra sprinkle of curry powder, and adjust with lime juice to taste.
Slice the grilled chicken and place on top of the noodle and broccoli mixture.
Toss gently to combine flavors and serve immediately.
