INGREDIENTS
200g Extra Firm Tofu
0.5 cup Shelled Edamame (approx. 100g)
1 cup Chopped Broccoli
1 medium Red Bell Pepper
0.5 cup Snap Peas
2 cloves Garlic
1 tsp Fresh Ginger, grated
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Oil
1 tsp Cornstarch
2 tbsp Chopped Green Onions
PREPARATION
Press the tofu to remove excess water, then cut into bite-sized cubes.
In a small bowl, toss the tofu cubes with cornstarch until evenly coated.
Heat the sesame oil in a non-stick skillet over medium-high heat. Add the tofu and sauté until all sides are golden and slightly crispy. Remove tofu from the skillet and set aside.
In the same skillet, add minced garlic and grated ginger. Sauté for a few seconds until fragrant.
Add chopped broccoli, sliced red bell pepper, and snap peas to the skillet. Stir-fry the vegetables for about 3-4 minutes until they are tender-crisp.
Return the crispy tofu to the skillet, then drizzle with low-sodium soy sauce. Toss everything together and stir-fry for an additional 1-2 minutes to ensure the flavors meld.
Garnish with chopped green onions before serving.
