INGREDIENTS
5 oz Lean Ground Turkey (142g)
1/2 medium Sweet Potato (57g)
1 Large Egg (50g)
1/2 medium Red Bell Pepper (75g)
1/4 medium Yellow Onion (30g)
1 Garlic Clove
1 tsp Olive Oil
Salt & Black Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium heat and add the olive oil.
Dice the sweet potato, red bell pepper, and yellow onion into small cubes. Mince the garlic.
Add the diced sweet potato to the skillet first, cooking for about 4-5 minutes until they begin to soften.
Stir in the diced bell pepper and onion along with the minced garlic. Sauté for another 3-4 minutes until the vegetables are tender.
Add the lean ground turkey to the skillet, breaking it up with a spatula. Cook thoroughly, about 5-6 minutes, until no pink remains.
Season the hash with salt and black pepper to taste. Mix well to combine and let it heat through.
In a separate small pan, heat a little olive oil and fry the egg until the edges become crispy and the yolk is still runny, or cooked to your liking.
Plate the turkey and sweet potato hash and top with the crispy egg. Enjoy immediately.
