Enjoy a vibrant stir-fry featuring crispy, golden tofu complemented by a medley of fresh vegetables and a light sesame soy dressing. This dish bursts with flavor, texture, and a satisfying crunch from toasted sesame seeds, making it a perfect balanced meal.
INGREDIENTS
300g Extra Firm Tofu
1/2 cup Shelled Edamame
1 cup Broccoli Florets
1/2 medium Red Bell Pepper
1/2 cup Sugar Snap Peas
1 tbsp Low Sodium Soy Sauce
1 tsp Sesame Oil
1 tsp Rice Vinegar
1 clove Garlic
1 tsp Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
In a bowl, toss tofu cubes with a little salt and a small portion of sesame oil. Optional: lightly dust with cornstarch for extra crispiness.
Heat a non-stick skillet over medium-high heat and add the tofu. Cook until all sides are crispy and golden, about 8-10 minutes. Remove tofu and set aside.
In the same skillet, add the minced garlic and remaining sesame oil, briefly sauté until fragrant.
Add broccoli florets, red bell pepper slices, and sugar snap peas. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
Return the tofu to the skillet, then add the shelled edamame. Pour in the low sodium soy sauce and rice vinegar, stirring everything to combine.
Allow the flavors to meld for another 1-2 minutes off the heat.
Garnish with toasted sesame seeds and serve immediately.
