Enjoy a beautifully seared salmon fillet paired with zesty garlic green beans and a creamy cauliflower mash. This dish is a vibrant celebration of tender, flaky salmon accented by the fresh crispness of green beans and the smooth texture of mashed cauliflower, with just a hint of aromatic garlic and lemon to brighten every bite.
INGREDIENTS
7 ounces Salmon Fillet
1 cup Green Beans
1 cup Cauliflower florets
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic (minced)
1 tablespoon Lemon Juice
Salt & Black Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and black pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon fillet skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms. Flip and cook for an additional 3-4 minutes until just cooked through. Squeeze a little lemon juice over the top during the last minute of cooking.
While the salmon cooks, steam the green beans until tender-crisp, about 4-5 minutes.
For the cauliflower mash, steam the cauliflower florets until very tender, approximately 8-10 minutes. Transfer to a bowl and mash with a fork or blend lightly, adding a pinch of salt, pepper, and a small drizzle of lemon juice if desired.
In a small pan, briefly sauté the minced garlic in a few drops of water or a tiny bit of olive oil until fragrant, then toss with the steamed green beans.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Garnish with an extra squeeze of lemon juice if desired and serve immediately.
