INGREDIENTS
6 oz Chicken Breast
1/4 cup Panko Breadcrumbs
1 tbsp Olive Oil
1 medium Red Bell Pepper
1/2 cup Pineapple Chunks
1/2 medium Yellow Onion
2 tbsp Sweet and Sour Sauce
1 clove Garlic, minced
Salt & Pepper to taste
PREPARATION
Preheat the oven to 400°F. Pat the chicken breast dry and season with salt and pepper.
Lightly coat the chicken in panko breadcrumbs. For extra crispiness, you can press the crumbs onto the chicken.
Place the breaded chicken on a baking sheet and bake for 15-20 minutes, or until cooked through and crispy. Alternatively, lightly pan-fry in 1/2 tablespoon of olive oil until golden.
While the chicken cooks, heat the remaining olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.
Add the sliced yellow onion and red bell pepper to the skillet and stir-fry until they begin to soften, about 3-4 minutes.
Stir in the pineapple chunks and sweet and sour sauce. Allow the sauce to warm through and coat the vegetables evenly, about 2 minutes.
Slice the crispy chicken into strips and combine with the stir-fried vegetables. Toss gently to ensure the chicken is well coated with the sauce.
Serve immediately and enjoy a balanced meal bursting with sweet, tangy, and savory flavors!
