INGREDIENTS
4.5 oz boneless skinless chicken thigh (128g)
80g sweet potato
1 cup green beans (125g)
1 tsp extra virgin olive oil
1 large boiled egg
2 cloves garlic
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Season the chicken thigh with salt, pepper, and a minced clove of garlic. Place it on a baking tray lined with parchment paper.
Roast the chicken in the preheated oven for about 25-30 minutes or until the internal temperature reaches 165°F.
While the chicken roasts, peel and dice the sweet potato. Boil or steam the sweet potato until tender, then mash with a fork, adding a pinch of salt and pepper.
Trim the green beans and steam or blanch them until crisp-tender. In a pan, heat 1 teaspoon of olive oil and sauté the green beans with the remaining minced garlic for 2-3 minutes.
Boil the egg until hard boiled (about 9-10 minutes), then peel and slice.
Plate the roasted chicken thigh alongside a serving of sweet potato mash and garlic green beans. Garnish with sliced boiled egg and enjoy your balanced, flavorful meal.
