INGREDIENTS
200g Extra Firm Tofu
1 cup Shelled Edamame (cooked)
1 cup Broccoli (chopped)
1 medium Red Bell Pepper (sliced)
1 small Carrot (julienned)
1 tbsp Soy Sauce
1 tsp Sesame Oil
2 cloves Garlic (minced)
1 tsp Fresh Ginger (grated)
PREPARATION
Press the tofu to remove excess water and cut it into cubes.
In a bowl, toss tofu cubes lightly with a drizzle of soy sauce and a sprinkle of garlic and ginger.
Heat a non-stick pan over medium-high heat with the sesame oil. Add the tofu and sauté until it becomes golden and crispy on all sides.
Remove the tofu from the pan and set aside.
In the same pan, add minced garlic and grated ginger, sauté for 30 seconds until fragrant.
Add the broccoli, red bell pepper, and carrots. Stir-fry the vegetables for about 3-4 minutes until they are tender yet crisp.
Gently stir in the cooked edamame and return the crispy tofu to the pan.
Pour in the remaining soy sauce and toss everything together until well combined and heated through.
Serve immediately, enjoying the mix of crispy tofu and fresh, colorful vegetables.
