INGREDIENTS
5 oz Ground Turkey (93% lean)
1/2 cup Sweet Potato Mash (approx. 100g)
1 cup Roasted Broccoli
2 tsp Olive Oil
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C) for the broccoli.
In a bowl, season the ground turkey with a pinch of salt and black pepper. Form into one or two patties.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil. Sear the turkey patties for about 4-5 minutes per side until fully cooked and nicely browned.
While the turkey cooks, toss the broccoli florets with the remaining 1 tsp olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the preheated oven for 15-20 minutes, until crisp-tender and slightly charred.
For the sweet potato mash, if not pre-cooked, peel and chop a sweet potato, boil until soft (about 15 minutes), then mash with a little salt until smooth. Alternatively, use pre-cooked mashed sweet potato measured to 1/2 cup.
Plate the turkey patties alongside a serving of sweet potato mash and roasted broccoli. Serve warm and enjoy!
