PREPARATION
Preheat the oven to 375°F.
Using a sharp knife, carefully slice a pocket into the side of the chicken breast without cutting all the way through.
In a small bowl, combine the chopped spinach, crumbled feta, light cream cheese, minced garlic, dried oregano, salt, and pepper until well mixed.
