PREPARATION
Preheat your oven to 425°F for roasting the potatoes and green beans.
Wash and halve the baby potatoes, then toss them with olive oil, salt, pepper, and half of the chopped fresh herbs. Spread them out on a baking sheet in a single layer.
Place the baking sheet in the oven and roast for 20-25 minutes until the potatoes are golden and crispy. In the last 10 minutes of roasting, add trimmed green beans tossed with a little salt, pepper, and a drizzle of olive oil.
While the vegetables roast, pat the steak dry and season both sides generously with salt, pepper, and the remaining fresh herbs. Mince the garlic cloves.
