INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 cloves Garlic
2 tbsp Unsweetened Almond Milk
2 tsp Olive Oil
1 tsp Butter
Salt and Pepper to taste
PREPARATION
Pat the salmon dry with paper towels and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat, add 2 teaspoons of olive oil. Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a crispy crust forms. Flip the salmon and cook for another 3-4 minutes until cooked through. Remove from heat.
Meanwhile, steam the green beans in a steamer basket over boiling water for about 4-5 minutes until they are tender yet crisp.
For the garlic mashed cauliflower, steam the cauliflower florets and garlic cloves together for about 8-10 minutes until soft. Transfer to a bowl.
Add 1 teaspoon of butter and 2 tablespoons of unsweetened almond milk to the steamed cauliflower and garlic. Mash until smooth and season with salt and pepper to taste.
Plate the seared salmon alongside a serving of steamed green beans and a generous scoop of garlic mashed cauliflower. Serve warm and enjoy.
