400g Firm Tofu
1 tbsp Extra Virgin Olive Oil
200g Asparagus
1 tbsp Fresh Lemon Juice
1 tsp Fresh Rosemary
1 tsp Fresh Thyme
0.5 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Press the tofu to remove excess moisture by wrapping it in a clean kitchen towel and placing a weight on top for about 15 minutes. Once pressed, slice the tofu into 4 even slabs (steaks).
Preheat your oven to 425°F (220°C). Toss the asparagus with half of the olive oil, a pinch of salt, and pepper. Arrange on a baking sheet and roast for 12-15 minutes until tender and slightly crispy.
Heat the remaining olive oil in a large non-stick skillet over medium-high heat. Sprinkle the tofu steaks with garlic powder, fresh rosemary, fresh thyme, salt, and pepper.
Place the tofu steaks in the skillet and sear for about 4-5 minutes on each side until golden brown and slightly crispy on the edges.
Drizzle the tofu with fresh lemon juice as they finish cooking. Remove the tofu from the skillet.
Serve the herbed tofu steaks alongside the roasted asparagus. Enjoy while hot.
