INGREDIENTS
4 oz Salmon Fillet
100 g Brussels Sprouts
150 g Cauliflower
1/4 cup Unsweetened Almond Milk
1 tsp Olive Oil
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Place the salmon on a lightly greased baking sheet. Drizzle with half the olive oil, a squeeze of lemon juice, and season with salt and pepper.
In a separate bowl, toss the Brussels sprouts with the remaining olive oil, salt, and pepper.
Roast the salmon and Brussels sprouts in the oven for about 12-15 minutes, until the salmon is cooked through and the Brussels sprouts are caramelized and tender.
Meanwhile, steam the cauliflower florets until very tender, about 8-10 minutes.
Transfer the steamed cauliflower to a blender or use a potato masher. Add the unsweetened almond milk, lemon juice, salt, and pepper, then blend or mash until creamy and smooth.
To serve, plate the roasted salmon alongside a generous portion of caramelized Brussels sprouts and top with a scoop of creamy cauliflower mash.
