PREPARATION
Preheat your oven to 425°F (220°C).
Pat the chicken thighs dry with paper towels. In a small bowl, combine olive oil, lemon juice, minced garlic, chopped fresh herbs, salt, and pepper.
Rub the mixture thoroughly over the chicken thighs, ensuring they are well coated.
