INGREDIENTS
6 oz Lean Ground Turkey
1 medium Bell Pepper
1 oz Part-Skim Mozzarella Cheese
1/4 medium Onion
1 clove Garlic
1/4 cup chopped Tomato
1 cup Fresh Spinach
1 teaspoon Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F.
Halve the bell pepper lengthwise and remove seeds and membranes.
In a skillet, heat olive oil over medium heat. Sauté the 1/4 chopped onion and minced garlic until softened, about 2 minutes.
Add the lean ground turkey to the skillet. Cook until browned, breaking it apart with a spatula. Season with salt and pepper to taste.
Stir in the chopped tomato and fresh spinach, cooking for an additional 2 minutes until the spinach wilts slightly.
Spoon the turkey and vegetable mixture into the hollowed bell pepper halves.
Top each stuffed pepper with shredded mozzarella cheese.
Place the stuffed peppers in a baking dish and bake in the preheated oven for about 15-20 minutes, or until the bell pepper is tender and the cheese is melted and bubbly.
Remove from the oven and let it cool slightly before serving.
