INGREDIENTS
300g Extra Firm Tofu
0.5 cup Shelled Edamame
1 cup Broccoli
1 medium Red Bell Pepper
1 medium Carrot
1 clove Garlic
1 tsp Fresh Ginger
1 tbsp Sesame Oil
2 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Seeds
PREPARATION
Drain and press the tofu for at least 15 minutes to remove excess water. Cut it into approximately 1-inch cubes.
In a bowl, gently toss the tofu with a light coating of cornstarch (optional) to enhance crispiness.
Heat 1 tablespoon of sesame oil in a non-stick skillet over medium heat. Add the tofu cubes and cook until all sides are golden and crispy, about 8-10 minutes. Remove the tofu from the skillet and set aside.
In the same skillet, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Add chopped broccoli, sliced red bell pepper, and julienned carrot to the skillet. Stir-fry the vegetables for 3-4 minutes until they are tender but still vibrant and crisp.
Return the crispy tofu to the skillet and add the shelled edamame. Drizzle with low-sodium soy sauce and toss everything together until evenly coated and heated through.
Garnish with a sprinkle of sesame seeds for added crunch and flavor before serving.
