INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1/2 cup Cooked Brown Rice
1.25 tbsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until a golden crust forms.
Carefully flip the salmon and cook for another 3-4 minutes until the fish is just cooked through. Remove and set aside.
In the same skillet, lower the heat to medium and add the remaining olive oil.
Add minced garlic and sauté for about 30 seconds until fragrant, then add the green beans. Sauté for 4-5 minutes until the beans are tender but still crisp.
Warm the pre-cooked brown rice separately and season lightly with salt and pepper.
Plate the salmon alongside a serving of garlic green beans and brown rice. Garnish with a squeeze of lemon if desired and serve immediately.
