5 oz Chicken Breast (140g)
100 g Brussels Sprouts
1/2 cup Red Grapes (75g)
1 tbsp Balsamic Vinegar
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Preheat your oven to 425°F (220°C).
Season the chicken breast with salt and pepper on both sides.
Trim and halve the Brussels sprouts. Toss them in a bowl with the extra virgin olive oil, a pinch of salt, and pepper.
Place the seasoned chicken breast and Brussels sprouts on a baking sheet lined with parchment paper.
Roast in the oven for about 20 minutes. Meanwhile, in a small saucepan, combine the red grapes, balsamic vinegar, and minced garlic. Simmer gently over medium heat for about 5 minutes until the grapes start to soften and the glaze thickens slightly.
After the initial roasting, remove the baking sheet, spoon the balsamic-glazed grapes over the chicken, and toss the Brussels sprouts to coat in the glaze. Return to the oven for an additional 5-7 minutes to meld the flavors.
