INGREDIENTS
1 can Black Beans (240g, drained)
4 large Eggs
1/2 cup Rolled Oats (40g)
1 scoop Pea Protein Powder (30g)
1/2 cup diced Red Bell Pepper (75g)
1/4 cup diced Onion (40g)
2 garlic cloves, minced
1/2 tsp Smoked Paprika
1/2 tsp Cumin
Salt & Pepper to taste
PREPARATION
In a large bowl, mash the black beans with a fork until mostly smooth with some texture remaining.
Add in the diced red bell pepper, onion, and minced garlic. Mix to evenly distribute the veggies.
Stir in the rolled oats and pea protein powder.
Beat the eggs in a small bowl and add them to the mixture along with smoked paprika, cumin, salt, and pepper.
Mix all ingredients thoroughly until well combined. If the mixture feels too wet, add a little extra oats; if too dry, a splash of water can help bind it.
Divide the mixture into 4 equal portions and shape each into a patty.
Heat a non-stick skillet over medium heat and lightly spray with cooking spray or a small drizzle of olive oil.
Cook each patty for about 4-5 minutes on each side, or until they are heated through and have a crisp exterior.
Serve warm as is, or with your favorite toppings and a side salad for a balanced meal.
