INGREDIENTS
6 oz Sirloin Steak (170g)
1 cup Green Beans (125g)
1 tsp Olive Oil for green beans (5g)
1.5 cups Cauliflower Florets (180g)
1 tsp Olive Oil for cauliflower (5g)
2 cloves Garlic
Salt (pinch)
Black Pepper (pinch)
PREPARATION
Pat the sirloin steak dry and season both sides generously with salt and black pepper.
Heat a skillet over medium-high heat. Once hot, sear the steak for about 3-4 minutes per side (for a 6 oz cut) until it reaches your desired level of doneness. Remove from the skillet and let rest.
While the steak is resting, blanch the green beans in boiling water for 2-3 minutes until crisp-tender, then drain and set aside.
In the same skillet, add 1 tsp of olive oil and minced garlic. Sauté briefly until fragrant, then toss in the green beans, stirring to coat evenly.
Steam the cauliflower florets until very tender, about 8-10 minutes. Transfer to a bowl, add 1 tsp olive oil, a pinch of salt, and garlic if desired. Mash until smooth with a fork or potato masher.
Plate the sliced steak alongside a serving of garlic green beans and a generous scoop of mashed cauliflower. Serve immediately.
