INGREDIENTS
125g Lean Beef Mince
70g Cooked Jasmine Rice
1 red Bell Pepper (≈80g)
50g Snap Peas
1 small Carrot (≈50g)
50g Plain Greek Yogurt
1 tbsp Soy Sauce
2 cloves Garlic
1 tsp Fresh Ginger
PREPARATION
Prepare all ingredients by slicing the red bell pepper into thin strips, julienning the carrot, and trimming the snap peas if necessary. Mince the garlic and grate the ginger.
In a wok or large skillet, heat a small amount of oil over medium-high heat. Add the minced garlic and grated ginger, stirring briefly until fragrant.
Add the lean beef mince to the pan, breaking it up as it cooks. Stir-fry until it is browned and cooked through.
Once the beef is nearly done, add the red bell pepper, snap peas, and carrot. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
Pour in the soy sauce and mix well to coat the beef and vegetables evenly with the seasoning.
In a separate bowl, gently reheat the pre-cooked jasmine rice if needed. Then serve a portion of rice on the plate, top with the beef and vegetable stir-fry.
Finish the dish with a dollop of plain Greek yogurt on top or on the side for added creaminess.
Serve immediately and enjoy your balanced, flavorful dinner!
