INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
2 tbsp Plain Nonfat Greek Yogurt
1 tsp Olive Oil
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Season the 6 oz salmon fillet with salt and pepper on both sides.
Heat 1 tsp olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and cook for about 4-5 minutes until the skin is crispy.
Flip the salmon gently and cook for an additional 3-4 minutes until salmon is just cooked through. Remove from the pan and set aside.
In the meantime, steam the green beans in a steamer basket over boiling water for about 4-5 minutes until tender-crisp. In the last minute, add the minced garlic to the beans to lightly sauté for flavor.
Steam the cauliflower florets for about 8-10 minutes until tender. Transfer to a bowl and add 2 tablespoons of plain Greek yogurt, salt, and pepper. Mash until creamy with a few small chunks for texture.
Plate the salmon alongside the garlic green beans and a generous serving of cauliflower mash. Drizzle any remaining garlic-infused oil from the pan over the green beans for extra flavor.
