Crispy Sweet Potato Hash with Turkey Sausage and Fried Egg
A hearty yet light dish featuring crispy sweet potato cubes, savory turkey sausage, and a perfectly fried egg that crowns this colorful hash. The medley of diced red bell pepper and onion infuse each bite with sweetness and crunch, while a hint of olive oil and seasonings ties everything together for a satisfying meal any time of day.
INGREDIENTS
1 medium Sweet Potato (114g)
3 links Turkey Sausage (168g total)
1 large Egg (50g)
1/4 cup diced Onion (40g)
1/4 cup diced Red Bell Pepper (40g)
1/2 teaspoon Olive Oil (2.5g)
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Rinse and dice the onion and red bell pepper.
Slice the turkey sausage into rounds.
Heat the olive oil in a non-stick skillet over medium heat. Add the diced onion and red bell pepper and sauté until they begin to soften, about 2-3 minutes.
Add the diced sweet potato and turkey sausage slices to the skillet. Season with salt and pepper. Continue to cook, stirring occasionally, until the sweet potatoes are tender and lightly crispy on the edges, approximately 10-12 minutes.
In a separate small pan, fry the egg to your preference (sunny side up works beautifully for this dish).
Once the hash is cooked through and has developed a nice crispy texture, transfer it to a serving plate and top with the fried egg.
Finish with a pinch of salt and pepper if desired, and serve warm.
