INGREDIENTS
6 oz Raw Shrimp
1 medium Zucchini
1 tbsp Unsalted Butter
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
Pinch Salt
Pinch Black Pepper
Pinch Red Pepper Flakes
PREPARATION
Pat the shrimp dry with a paper towel and season lightly with salt, black pepper, and red pepper flakes.
Using a spiralizer or vegetable peeler, turn the zucchini into noodles and set aside.
Heat the olive oil in a large non-stick skillet over medium-high heat.
Add the shrimp to the skillet and cook for about 2 minutes on each side until they start turning pink. Remove shrimp from the skillet and set aside.
In the same skillet, lower the heat to medium and add the butter. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
Return the shrimp to the pan, drizzle with lemon juice, and toss gently to combine, cooking for an additional minute.
Add the zucchini noodles to the skillet and toss them with the garlic butter shrimp; cook for another 1-2 minutes until slightly tender but still crisp.
Adjust seasoning if needed and serve immediately.
