Enjoy a vibrant plate featuring tender, seared beef paired with caramelized peppers and onions, complemented by perfectly roasted potatoes. This dish strikes a balance between savory crispiness and natural sweetness from the veggies, making for a satisfying and nutrient-rich meal.
INGREDIENTS
6 oz Beef Sirloin (~170g)
0.5 cup sliced Red Bell Pepper (~75g)
0.5 medium sliced Yellow Onion (~55g)
100g Potato, baked/roasted
1 teaspoon Olive Oil
Salt, pinch
Black Pepper, pinch
PREPARATION
Preheat your oven to 425°F (220°C) for roasting the potatoes.
Cube the potatoes into 1-inch pieces, toss with half of the olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 20-25 minutes until golden and tender.
While the potatoes roast, pat the beef sirloin dry and season with salt and black pepper.
Heat a skillet over medium-high heat with the remaining olive oil. Sear the beef for about 3-4 minutes on each side until a crispy brown crust forms while still keeping the interior juicy. Remove the beef and let it rest.
In the same skillet, add the sliced bell pepper and onion. Sauté until they are softened and lightly caramelized, about 5 minutes.
Slice the beef thinly, plate it alongside the sautéed vegetables and roasted potatoes, and serve immediately.
