INGREDIENTS
6.5 oz Ground Lamb (85% lean)
1 medium Carrot
1 small Parsnip
1/4 red Onion
1 tsp Olive Oil
1 tsp Fresh Rosemary
1 tsp Fresh Thyme
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine the ground lamb with chopped garlic, freshly chopped rosemary and thyme, salt, and black pepper. Mix until well incorporated.
Chop the carrot, parsnip, and red onion into bite-sized pieces. Toss them in a bowl with olive oil, salt, and pepper.
Spread the vegetables evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until tender and lightly caramelized.
While the vegetables are roasting, shape the seasoned ground lamb into loose patties or crumble it in a skillet over medium heat. Cook the lamb until it’s browned and just cooked through, about 7-10 minutes.
Plate the lamb alongside the roasted root vegetables. Serve hot and enjoy a hearty, balanced meal.
