Enjoy a hearty, savory hash that brings together the natural sweetness of roasted sweet potatoes, crispy, smoky bacon, and vibrant sautéed greens, all uplifted with a zesty hint of garlic and smoked paprika. The addition of egg whites boosts the protein content, making it a balanced and satisfying meal any time of day.
INGREDIENTS
1 medium Sweet Potato
3 slices Pork Bacon
4 large Egg Whites
1 cup Baby Spinach & Kale Mix
1 small Yellow Onion
1 clove Garlic
1 tsp Olive Oil
½ tsp Smoked Paprika
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium heat.
Peel and cube the sweet potato into bite-sized pieces. Dice the small yellow onion and mince the garlic.
In the skillet, add the olive oil and sauté the onion and garlic until fragrant and translucent.
Add the sweet potato cubes and sprinkle with smoked paprika, salt, and pepper. Cook until the sweet potatoes are tender and slightly crispy, about 10-12 minutes, stirring occasionally.
In a separate pan, cook the bacon slices until they are crispy. Once done, crumble or chop them into bite-sized pieces.
Add the baby spinach & kale mix to the sweet potato mixture and sauté for an additional 2-3 minutes until the greens are just wilted.
Pour the egg whites over the hash, stirring gently to combine. Continue cooking until the egg whites are set.
Fold in the crispy bacon pieces, adjust seasonings if needed, and serve warm.
