INGREDIENTS
5 oz Chicken Breast
1 medium Potato
1 clove Garlic
1 tbsp Skim Milk
1 tsp Butter
1 tbsp Fresh Mixed Herbs
6 spears Asparagus
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the chicken breast dry and season with salt, pepper, and fresh mixed herbs.
Heat a non-stick skillet over medium-high heat. Add the chicken and sear for about 4-5 minutes per side until cooked through and golden on the outside.
Meanwhile, peel (if desired) and cube the potato. Boil in lightly salted water until tender, about 15-20 minutes. Drain the water.
In the pot, add the garlic and mash the potatoes with the garlic, then stir in the skim milk and butter until smooth and creamy. Adjust seasoning with salt & pepper.
Preheat the oven to 400°F. Toss the asparagus spears with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 10-12 minutes until tender and slightly crispy.
Plate the sliced chicken breast alongside a serving of garlic mashed potatoes and a side of roasted asparagus. Enjoy your balanced, flavorful meal.
