INGREDIENTS
300g Extra-Firm Tofu
1/2 cup Shelled Edamame (75g)
1 cup Broccoli
1 medium Red Bell Pepper
1 medium Carrot
1/2 medium Onion
1 tbsp Sesame Seeds
1 tbsp Low Sodium Soy Sauce
2 cloves Fresh Garlic
1 tsp Fresh Ginger, minced
1 tsp Cooking Oil
PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut into bite-sized cubes.
Heat the cooking oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes and stir-fry until the edges are golden and crispy, about 5-7 minutes.
Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
Toss in broccoli, red bell pepper, sliced carrot, and sliced onion. Stir-fry for an additional 3-4 minutes or until vegetables are slightly tender but still crisp.
Add the shelled edamame and drizzle the low sodium soy sauce over the mixture. Stir-fry for another 2 minutes to warm the edamame and evenly coat the vegetables and tofu.
Remove from heat and sprinkle with sesame seeds.
Serve immediately and enjoy your nutrient-packed stir-fry.
